The mint is the escrow agent. It still (obviously) needs to be trusted.

The mint will need to be trustworthy anyway; otherwise, you can get a "final round" problem in which they print up lots of ecash and spend it before the value completely plummets, or they get lots of requests to cash existing ecash in. -Allen
