How? The only ethical way would be to either put a govenor on the vehicle
or else have somebody ride along with you. Otherwise they'd just have to
trust the civil authorities to catch speeders.

Not necessarily, there is an issue of cognisence and alternative. For
example, let's say that the contract says 65 max, but somebody goes 85.
How's the company going to know?

Within limits, yes. The question is where are the limits.
