This paper, a first google result, appears to describe hacking an Ettus USRP to sweep 5 GHz in 5ms. They describe picking up cell towers at the same time as wifi with one radio. Samples get lost and corrupt; they use calibration to compensate some: https://cseweb.ucsd.edu/~schulman/docs/nsdi19-sweepsense.pdf
This is more interesting: https://github.com/ucsdsysnet/sweepsense They didn't actually process both wifi and lte simultaneously, I misread it. It dwells so briefly you don't get a lot of data. There are nice pictures on the github.
